Five Seed Crackers

Recipe suggested by Judith Plumley


Delicious on their own as a snack, or with butter, cheese or hummus, these savoury crackers are so easy to make. Try adding a pinch of chilli flakes, or swapping mixed herbs for rosemary or your favourite seasoning.


Prep Time: 15 minutes

Cook Time: 60 minutes


Ingredients

  • 130g sunflower seeds

  • 100g pumpkin seeds

  • 80g chia seeds

  • 80g sesame seeds

  • 40g linseeds

  • 1/2 tsp salt

  • 375ml water

  • 1 tbsp mixed herbs


Method

  • Preheat the oven to 170C/340F and line two baking trays with baking parchment

  • Mix all the ingredients in a bowl and leave for 10-15 minutes for the water to be absorbed

  • Stir well and split the mixture across the two baking trays

  • Spread thinly to about 3-4 mm thick (too thin and your crackers will be fragile, too thick and they'll turn out more like a cookie)

  • Bake for 1 hour, switching the trays after 30 minutes

  • If not crisp, bake for another 5-10 minutes

  • Allow to cool then break into pieces
