Cure your arachnophobia with these yummy spider cookies! A great recipe to make with the kids and grandkids, especially at Hallowe'en!
Ingredients:
75g salted butter, cubed
1 small egg
100g plain flour
50g golden caster sugar
25g muscovado sugar
¼ teaspoon cinnamon
¼ teaspoon baking powder
⅛ teaspoon nutmeg
80g oats
40g milk chocolate chips
20 white chocolate chips
10 milk chocolate buttons
Method:
To make the cookies:
Preheat the oven to 180C and line two baking trays with baking paper.
Combine both sugars and the butter in a mixing bowl and beat until fluffy.
Add the egg and mix well.
Gradually add the flour, cinnamon, nutmeg and baking powder, then gently stir in the oats.
Divide the dough into 10 pieces, roll into balls and place on the baking trays. Gently press down on each ball to flatten into a cookie shape.
Bake for 10-12 minutes until slightly brown on top. Remove from the oven and allow to cool for a few minutes before transferring to a cooling rack. It’s important NOT to decorate until they are cool, or the chocolate will melt.
To decorate:
Put a little water in a saucepan and begin to warm. Put the 40g milk chocolate chips (not the buttons) into a bowl and place into the saucepan. Stir until melted, turn off the heat, but keep the chocolate bowl in the warm water.
For the body, use a cocktail stick or the handle of a metal spoon to scoop a little melted chocolate from the bowl. Blob it gently onto the back of one chocolate button and then press down gently on a cookie. The chocolate is like glue and will help the button stay on the cookie. Repeat with all of the cookies.
For the legs, use a cocktail stick or the metal handle of a spoon to paint four chocolate legs on each side of the chocolate button bodies.
For the eyes, you’ll need two white chocolate chips for each spider. Dab a small blob of chocolate on the underside of each eye and stick them on the spider bodies. Repeat with the other cookies. Now add a little blob of milk chocolate to create the eye ball. Have fun making different facial expressions!
Finally, pop them in the fridge for about 30 minutes to allow the chocolate to harden. The cookies can be stored in an airtight container for a few days.
