Zucchini Relish

A zingy relish made with courgettes and onion, recommended by our volunteer Sheelagh—a great way to use up all those homegrown courgettes! Adapted from a recipe by Homestead Patch.

Ingredients:
1kg courgettes
400g onion
2 tablespoons salt
1 red pepper, chopped
1 green pepper, chopped
450g sugar
250ml apple cyder vinegar
½ tablespoon turmeric
1 tablespoon mustard powder
½ teaspoon ground black pepper
1 teaspoon celery salt
2½ tablespoons sea salt
1½ teaspoons nutmeg
1½ teaspoons corn starch
Instructions:
Finely chop or food-process the courgettes and onion. Stir together with 2 tablespoons of salt, then cover and refrigerate overnight
Rinse and drain through a tea towel in a colander. Put the drained mixture in a saucepan and add the remaining ingredients
Simmer for 30 minutes
Decant into sterilised jars—this amount will make approximately 5 x 250ml jars
Serve directly from the jar or mix half and half with mayonnaise to make a dip
