Zucchini Relish

A zingy relish made with courgettes and onion, recommended by our volunteer Sheelagh—a great way to use up all those homegrown courgettes! Adapted from a recipe by Homestead Patch.



Ingredients:

  • 1kg courgettes

  • 400g onion

  • 2 tablespoons salt

  • 1 red pepper, chopped

  • 1 green pepper, chopped

  • 450g sugar

  • 250ml apple cyder vinegar

  • ½ tablespoon turmeric

  • 1 tablespoon mustard powder

  • ½ teaspoon ground black pepper

  • 1 teaspoon celery salt

  • 2½ tablespoons sea salt

  • 1½ teaspoons nutmeg

  • 1½ teaspoons corn starch


Instructions:

  • Finely chop or food-process the courgettes and onion. Stir together with 2 tablespoons of salt, then cover and refrigerate overnight

  • Rinse and drain through a tea towel in a colander. Put the drained mixture in a saucepan and add the remaining ingredients

  • Simmer for 30 minutes

  • Decant into sterilised jars—this amount will make approximately 5 x 250ml jars

  • Serve directly from the jar or mix half and half with mayonnaise to make a dip
