Banana Loaf


Ripe bananas make this cake deliciously sweet without the need for added sugar...and it’s vegan too. Lots of reasons to eat more of it!

 

Ingredients

  • 450g peeled, ripe bananas (about 4)

  • 50g chopped mixed nuts

  • 100g jumbo raisins

  • 75g porridge oats

  • 140g wholemeal plain flour

  • 2tsp baking powder

  • 100ml sunflower oil (may need slightly less)

 

Method

  • Preheat the oven to 190oC  (375oF)

  • Mash the bananas with a fork or potato masher in a large bowl. Add all the other dry ingredients and mix together well. Gradually add the oil until a cake batter consistency is achieved—you may not need all the oil

  • Spoon into a greased loaf tin

  • Bake for 35-45 minutes or until a skewer inserted into the centre comes out clean. Cool for 10 minutes before turning out onto a cooling rack

 

We used pecans, walnuts and flaked almonds but feel free to substitute your favourites.
