Banana Loaf

Ripe bananas make this cake deliciously sweet without the need for added sugar...and it’s vegan too. Lots of reasons to eat more of it!
Ingredients
450g peeled, ripe bananas (about 4)
50g chopped mixed nuts
100g jumbo raisins
75g porridge oats
140g wholemeal plain flour
2tsp baking powder
100ml sunflower oil (may need slightly less)
Method
Preheat the oven to 190oC (375oF)
Mash the bananas with a fork or potato masher in a large bowl. Add all the other dry ingredients and mix together well. Gradually add the oil until a cake batter consistency is achieved—you may not need all the oil
Spoon into a greased loaf tin
Bake for 35-45 minutes or until a skewer inserted into the centre comes out clean. Cool for 10 minutes before turning out onto a cooling rack
We used pecans, walnuts and flaked almonds but feel free to substitute your favourites.
