Broccoli, Fig & Feta Salad

The perfect balance of peppery broccoli sprouts and sweet figs, with the delicious tang of feta cheese. Works well in wraps and pitta!

Put your homegrown sprouts to good use in this delicious salad!
Prep Time: 10 minutes
Serves: 2
Ingredients
1 large handful of broccoli sprouts
1 small gem lettuce, chopped
4 dried figs, stemmed and sliced
1 pack feta cheese, cubed
20g flaked almonds, toasted
2 teaspoons extra-virgin olive oil
2 teaspoons balsamic vinegar
pinch of salt
freshly ground pepper to taste
Method
Combine sprouts, lettuce, figs, feta cheese and almonds in a medium bowl
Stir together oil, vinegar, salt and pepper
Just before serving, drizzle the dressing over the salad and toss
To make ahead: Refrigerate the salad and dressing separately for up to 24 hours.
