Chia Pudding

Chia seeds are packed full of protein, antioxidants, omega-3 fats, minerals and fibre, so make a really healthy addition to your diet. They expand and form a gel when in contact with liquid, which is why they’re great for making this easy pudding recipe.


Serve for breakfast or dessert, on its own or topped with fresh fruit, granola, seeds or peanut butter. Try adding a pinch of cinnamon or ginger, or adjust the quantities of seeds and milk to make a texture that suits you. It’s easy to mix up the night before and leave overnight in the fridge for a quick and healthy breakfast.


Prep Time: 15 minutes

Serves: 1

 

Ingredients

  • 2 tbsp chia seeds

  • 125ml plant milk of your choice

  • 2 tbsp coconut or other plant-based yoghurt

  • 1 tbsp maple syrup

  • toppings of your choice


Method

  • Put the chia seeds, plant milk, yoghurt and maple syrup into a bowl and stir well

  • Leave for 10-15 minutes to thicken up, stirring once or twice during this time to ensure it sets evenly

  • Serve on its own or with your favourite toppings


It's really that simple!
