Date & Walnut Cake

A delicious, easy to make cake packed full of fruit and nuts
Prep time: 10 minutes
Cook time: 90 minutes
Ingredients
200g self-raising flour
pinch of salt
100g butter or margarine
100g muscovado sugar
200g pitted dates
50g walnuts, chopped
2 eggs
125ml milk
a few drops of vanilla essence
Method
Preheat the oven to 160 degrees centigrade (140 fan) and grease and line a 2lb loaf tin
Sieve the flour and salt in a bowl and rub in the fat
Add the sugar, dates and walnuts
Beat in the eggs, milk and vanilla essence
Spoon into the prepared tin and bake on the middle shelf for 1 ½ hours or until a skewer comes out clean
