Date & Walnut Cake

A delicious, easy to make cake packed full of fruit and nuts


Prep time: 10 minutes

Cook time: 90 minutes


Ingredients

  • 200g self-raising flour

  • pinch of salt

  • 100g butter or margarine

  • 100g muscovado sugar

  • 200g pitted dates

  • 50g walnuts, chopped

  • 2 eggs

  • 125ml milk

  • a few drops of vanilla essence


Method

  • Preheat the oven to 160 degrees centigrade (140 fan) and grease and line a 2lb loaf tin

  • Sieve the flour and salt in a bowl and rub in the fat

  • Add the sugar, dates and walnuts

  • Beat in the eggs, milk and vanilla essence

  • Spoon into the prepared tin and bake on the middle shelf for 1 ½ hours or until a skewer comes out clean
